OLIVE GARDEN’S CITRUS GLAZED SALMON

I’ve been away from the blog for way too long. When summer comes around, my life and free time are gone!

Playing with the kids is my top priority.

This summer I vowed to teach my girls how to cook. Daughter #2 is afraid of anything hot ~ she doesn’t want to get burned so we’re taking it slow.

Awhile back, after visiting our boys up at school, on our drive back down the mountain we stopped at an Olive Garden. Because we are doing the keto diet, I ordered the Citrus Glazed Salmon. Let me tell you, it was the BEST salmon I have ever tasted!!!!

So tonight I tried a new recipe that I found that claims to be the same recipe.

 

OLIVE GARDEN’S CITRUS GLAZED SALMON

Ingredients

4 (6 oz) pieces of salmon

1/2 cup orange juice

1/4 cup lemon juice

1/4 cup lime juice

1/4 cup orange marmalade

2 garlic cloves, minced

3 Tbsp. soy sauce

1/4 cup brown sugar

1 Tbsp. corn starch

1 Tbsp. water

 

Directions

  1. In a medium saucepan whisk together orange juice, lemon juice, lime juice, orange marmalade, garlic, soy sauce and brown sugar.
  2. In a small bowl, whisk together cornstarch and water.
  3. Slowly stir into the marinade and bring to a boil over medium high heat until the mixture starts to thicken.
  4. Remove from heat.
  5. Lay salmon skin side down on cedar planks(or well oiled grill) and season with salt and pepper.
  6. Brush half of the marinade onto the tops of the salmon and grill over medium high heat for 12-15 minutes.
  7. Transfer the salmon to plates and brush with reserved marinade on top.

The salmon was a hit with the family! And it really was a family affair!

Son #2 made baked brussel sprouts,

Daughter #2 made fettucini alfredo noodles,

I made the marinade for the salmon,

and the LOML made the spinach and grilled the salmon.

What a great evening of spending time with family and eating a delicious meal.
